Ingredients

2 tbsp salted butter
-
10 oz. frozen peppers and onions
-
(2) 15.25 oz. cans of southwest corn
-
(1) 15 oz. can potatoes

1 oz. Melinda’s Ghost Pepper Hot Sauce

(1) 32 oz. carton vegetable broth
-
8 oz. heavy cream
-
¼ cup bacon bits for topping
-
½ cup diced fresh green onion
-
Salt and Pepper to taste
Directions
Melt butter in a dutch oven over medium heat.
Sautee 10 oz. frozen peppers and onions until soft.
Add in corn, potatoes, Melinda’s Ghost Pepper Hot Sauce and vegetable broth. Stir ingredients.
Turn the heat to medium-high and bring the soup to a low simmer while stirring occasionally.
After the soup has simmered for 5 minutes, stir in heavy cream, and add salt and pepper to taste.
Ladle into bowls and garnish with bacon bits and diced green onions.
