Ingredients

2 cups shredded rotisserie chicken
- (1) 7 oz. can salsa verde
- (1) 4 oz. can diced green chiles
- (1) 14.5 oz. can diced tomatoes
- (1) 8.5 oz. pouch cilantro lime rice
- ⅓ cup sour cream, plus more for garnish
- 1 tbsp cumin
- 1 tbsp chili powder
- 4 oz. Melinda’s Green Sauce
- 8 oz. shredded Mexican cheese
- Sliced avocado for garnish
Directions
Preheat oven to 375º.
- In a casserole dish, add chicken, salsa verde, green chiles, tomatoes, rice, sour cream, cumin, chili powder, and Melinda’s Green Sauce. Mix well to combine and evenly distribute the ingredients.
- Top with a generous layer of Mexican cheese.
- Bake for 20 minutes until golden brown on top.
- To serve, scoop a generous portion onto a plate. Garnish with a dollop of sour cream and sliced avocado.
