1 to 1 ½ lbs flank or skirt steak
- 2 tsp olive oil
- 1 clove garlic, minced
- Salt & pepper to taste

¼ C Melinda’s Strawberry Ghost Pepper Jelly
- 1 Tbsp apple cider vinegar
- 1 tsp soy sauce or tamari
- Juice of ½ lime

8 small corn tortillas
- ½ red onion, pickled
- 1 avocado sliced or smashed
- Queso fresco or cotija, crumbled
- Fresh cilantro
- Lime wedges to serve

Directions
Prep the Steak: Rub steak with olive oil, garlic, paprika, salt and pepper. Let sit at room temp for 20-30 minutes
- Make the Glaze: In a saucepan over low heat, combine jelly, vinegar and soy sauce. Stir until melted and smooth. Add lime juice if desired.
- Cook the steak: Grill or sear on high heat for 3-5 minutes per side. At the last minute, brush with glaze to caramelize.
- Rest and Slice: Let steak rest 5-10 minutes then slice thinly against the grain.
- Warm the tortillas: Heat tortillas in a dry pan or over an open flame
- Assemble tacos: Layer steak, avocado, onion, cheese and cilantro. Drizzle with remaining glaze or lime juice
