Ingredients
- 1 garlic clove, minced
- 1 tbsp finely chopped, peeled ginger
- 16 oz ground pork
- ½ cup yellow onion, thinly sliced
- ¼ cup soy sauce
- 2 tbsp Melinda’s Sriracha sauce
- 2 cups of rice
- 12 oz coleslaw cabbage mix
- Shredded carrot, to garnish
- Scallion, thinly sliced, to garnish
- Sesame seeds, to garnish
- Salt, to taste
- Vegetable oil, for cooking
Directions
Cook 2 cups of rice
Heat a drizzle of vegetable oil in a skillet over medium heat.
Add the minced garlic and ginger and cook until fragrant, about 1 minute.
Add the ground pork, breaking it into small pieces. Cook until it starts to brown, about 8 minutes.
While the pork cooks, thinly slice half a yellow onion into strips.
Add the onion to the skillet, followed by the soy sauce and Melinda’s Sriracha. Stir to combine and let the flavors meld for 1–2 minutes.
Add the coleslaw mix and stir until well combined and just tender, 2–3 minutes more. Taste and season with salt as needed.
Recipe Note
To serve, add rice to the bowl and scoop hearty portions of the pork mixture into bowls. Garnish with shredded carrots, scallions, and sesame seeds.
