A double-fried wing masterpiece combining Melinda's Gochujang and Japanese BBQ sauce for an Asian-fusion kick. These wings are fried twice for extra crunch, then tossed in a sticky, sweet, and spicy glaze that balances umami soy with zesty ginger and garlic. Perfect for game day or a bold dinner appetizer.
Ingredients
- 18-24 chicken wings
- Duck fat spray (or neutral oil spray)
- Flour/cornstarch blend (for dredging)
- 1/4 cup Melinda's Gochujang Sauce
- 1/4 cup sugar
- 3 tbsp Japanese BBQ sauce
- 2 1/2 tbsp soy sauce
- 1 1/2 tbsp rice wine vinegar
- 1 tbsp Melinda's Honey
- 1 tbsp ketchup
- 6 tbsp water
- 2 garlic cloves (minced)
- 1/2 tsp fresh ginger (grated)
- 1/2 tsp salt
- Lemon zest (to taste)
- Chopped chives
Directions
- Coat wings lightly with duck fat spray, then dredge heavily in the flour/cornstarch blend.
- Deep fry wings at 350 degrees F until light golden brown (first fry).
- Remove wings and let them rest for 5-10 minutes.
- While wings rest, combine all sauce ingredients in a saucepan.
- Bring sauce to a light simmer over medium heat, then remove from heat.
- Fry wings a second time until darker golden and extra crispy (second fry).
- Toss hot wings in the warm sauce until fully coated.
- Garnish with lemon zest and chopped chives.
- Serve immediately.
