2lbshrimppeeled and deveined, (U16/20 size preferred)
1/4 cupCilantrochopped
2tbspred onionchopped
1cupcucumber1/2" dice
1/2cupcherry tomatoesquartered
1cuppineapple1/4" dice
1tbspgarlicfinely chopped
1/4cuplime juice
1cupgrapefruitsegmented (can be substituted with oranges)
1avocado1/2" dice
  1. Boil shrimp for 2-3 minutes, remove and place in ice bath to cool.
  2. Pat the shrimp dry and place in a large bowl.
  3. Stir in cilantro, red onion, cucumber, tomatoes, pineapple, garlic, ketchup, lime juice, hot sauce, and season with salt.
  4. Gently fold in grapefruit.
  5. Place into serving bowl/plate and top with avocado, fresh squeeze of lime juice, and cilantro leaves.
  6. Cover, and refrigerate 2 to 3 hours.
