Ingredients
 
1smallred oniondiced small
3stalksgreen onionschopped fine
1smallred bell pepperchopped
2podsJalapeñoseeded and chopped fine
1 pintcherry tomatoeschopped
1clovegarlicminced fine
4ounces lime juice
15ouncesblack-eyed peas 15 oz can, drained
15ouncescorn15 oz can, drained
1 cupCliantro
.5teaspoon ground cumin
.5teaspoonground coriander
1teaspoonKosher Salt
1teaspoon black pepper
Instructions
 
  1. Mix all ingredients together in a large bowl with half of the cilantro. Cover and chill in the refrigerator for 45 mins to 2 hours. Add the remaining cilantro when you serve. Serve with a mix of blue and yellow corn chips, plantain chips, yuca chips, and sweet potato chips for that something extra.
